So I have given edit rights to all users on my wiki. Now if I create a new space, how would one restrict access to this space ? Will the global edit rights override any specific restrictions on another space.

Global edit rights don't override specific rights given in a specific space or a specific document. The more specific right always win. So to restrict viewing or edition on a space or document just specify and "Allow" rights to the only users or groups allowed to view or edit the document.

The only exception is for the admin right that wins at the global level.
